The restaurant “Stare Zaporizhyzhya’ is situated in the heart of Kyiv, in a beautiful historical Podol. Now having sat at the favorite table and enjoying with the dishes of modern Kyiv cuisine,it’s rather difficult to imagine that in the 18th century the talented people who could cook delicious food used to live in this building. It is the house № 27 which on Aleksandrovskaya Str.(now Sagaidachnyi Str.) that belonged to the Balabuh family, the family of famous Kyiv confectioners.In 1787 the Swiss Bal’i the courtier confectioner of the empress Kateryna II happened to be in Kyiv. He must be destined to broke his leg and stay in our town for treatment.
While living in Kyiv the Swiss found local fruits and began to use them for making sweets, candied fruits, and jam. So he taught the confectioner Balabuh, and the latter was so successful in doing this that very soon the famous Kyiv jam was served to the imperial table.
Later in the name of the master the candied fruits were gently called “balabushki”, even the French duke Monpas’ye adored them.
The head chef of the restaurant “Stare Zaporizhyzhya’ is the Frenchman Christian Matis, whose family was represented by three generations of chefs. Christian’s native land is the town Sarburg (Lotaringia region, France). In that very place he gained the experience and knowledge of cooking. He had studied and worked a lot in French famous restaurants “Michelin-starred” and now he will apply all his skills in the menu of “Stare Zaporizhyzhya’, where he will introduce a modern Kyiv cuisine.
